How It's Made

The Origin of the Seed

The integrity of the oil depends on the integrity of the seed. Our seeds are chosen from fields in Henan and Hubei provinces in China, where the subtropical air gives them weight and fragrance. Only whole, fully mature, non-GMO seeds are accepted. Each seed is examined for fullness, color, and integrity. Nothing fractured, nothing hollow, nothing impure.

The Work of Preparation

Our seeds are carefully screened to remove stones, dust, and fragments through vibrating separation. They are washed thoroughly in flowing water, not rushed through mechanized cycles. Then they are laid to dry, naturally, until they reach a point of moisture that can only be determined by watchful eyes and practiced hands.

The Discipline of Roasting

Our seeds are roasted approximately ten degrees celsius lower than conventional practice for optimal taste. No scorching. No burn. No bitterness. Only gentle coaxing. The nutrients remain intact, the antioxidants unharmed.

The Integrity of Extraction

Once the seeds have given their fragrance, they are pressed without any additives or solvents. We use no hexane, no sodium hydroxide, no chemical refining of any kind. The oil is pressed mechanically and is allowed to rest, the sediment to settle, the clarity to emerge without interruption.
