A simple, nutty noodle dish that leans on the depth of toasted sesame oil and the savoriness of soy. The sauce clings lightly to the noodles, rich but never heavy, with a subtle sweetness and a warm, roasted aroma. It’s quick, deeply satisfying, and just as good warm or cold.
Ingredients
- 6 oz noodles (spaghetti, somen, or soba)
- 1 ½ tablespoons sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon rice vinegar
- ½ teaspoon sugar or honey
- 1 scallion, finely sliced
- Toasted sesame seeds, for garnish
Directions
- Cook the noodles according to package directions until just tender. Drain and rinse briefly under cool water, then toss with a small drizzle of sesame oil to keep them from sticking.
- In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, and sugar or honey until smooth. Adjust to taste — it should be savory with a touch of sweetness.
- Toss the noodles with the sauce until evenly coated. Add the scallions and a sprinkle of sesame seeds to finish. Serve warm, room temperature, or chilled.
